Does anyone know the figures for the the full advance of the ignition timing on an xv920 - degrees btdc (before top dead centre) please? (I have an xv920 ignitor unit fitted to a very special engine that is running a bit hot at higher revs)

Ignition Timing is controlled by the on board computer

You real can't manually adjust the timing one way or the other. All done for you automagically.
There is no timing advance adjustment available on the virago. The pickups are not movable.

What temperature is this special engine running to and what makes it special? Is it an XV920 or something else?

Rather than Ignition timing changes. Cylinder Head Temperature (CHT) can be adjusted through Carburetor Jetting. Richer mixtures run cooler. Along with different Spark Plug Heat Ranges.

"A good operating range for the tip of a plug might be between 450 and 650 degrees C (roughly 850-1200 F). Starting with an understanding of the operating temperature range of the engine (which can differ significantly between engines), engineers specify a plug that will run within the desired heat range. For Viragos that plug is the BP7ES."

The special engine is a 1300cc Panther v-twin made out of two 650 Panthers joined together. I need to know the specifications of the 1982 xv920 Virago CDI unit so as to ascertain whether the computerised timing advance is compatible with the full advance of a Panther.

I'm not aware of that detailed information being published anywhere. The only source would be Yamaha. The Igniter box is 38 years old. Have you thought about using something else that would be more compatible and may work better with your Panther engine. We have enough problems trying to keep XV920's running with these igniter boxes. But, for a completely different application that is experimental is iffy to say the least.
